So does this song mean that whoever its about is committing suicide
or just killing who he used to be to become a better man?

It's about becoming a better man, and "killing" the old one inside.
He spoke about it when they played it on the radio, of course they
only played it once because he can't be there to explain it everytime.

This is the perfect example of how a song should be written. Gives me chills every time. And McGraw sings the hell out of it, and you, Shantel, made an excellent tab!
